Harvesting herb roots

Herb roots are sometimes as useful as the plant itself, and can be used for culinary or medicinal purposes. For example, horseradish root (right) is high in vitamin C and can be grated into coleslaw and cream cheese. It is best to dig herb roots out of the ground at the end of the growing season.
